Early in our marriage, I had come home from work and made something Tex Mex, not realizing that we were out of salsa.

Jokingly, my husband said that I should go in the kitchen and just whip something up. Well, this is it. We’ve been making this salsa for about 15 years now, only using store bought in a pinch. I love the fresh taste and that it is so quick and easy.

Ingredients
Scale
- 2 cans Rotel tomatoes and chilis (drained and reserve liquid)
- 1/4 onion (preferably red)
- 3–4 cloves garlic
- 1 bunch fresh cilantro
- Juice of 3–4 limes
- 1–2 Tbsp apple cider vinegar
- Salt to taste (1/2 tsp)
Instructions
- Blend all ingredients minus one can drained Rotel and reserved liquid. Stir in second can of Rotel. Add reserved liquid if needed. Adjust salt.
- Serve with tortilla chips or your favorite Mexican dish (and margaritas). Lasts about 3-4 days in fridge.
Notes
You can make this in the blender or with an immersion blender.
