Early in our marriage, I had come home from work and made something Tex Mex, not realizing that we were out of salsa.

Jokingly, my husband said that I should go in the kitchen and just whip something up. Well, this is it. We’ve been making this salsa for about 15 years now, only using store bought in a pinch.  I love the fresh taste and that it is so quick and easy.

Salsa (Quick and Dirty)

Description

 I love the fresh taste of this Salsa and that it is so quick and easy.


Ingredients

Scale
  • 2 cans Rotel tomatoes and chilis (drained and reserve liquid)
  • 1/4 onion (preferably red)
  • 34 cloves garlic
  • 1 bunch fresh cilantro
  • Juice of 34 limes
  • 12 Tbsp apple cider vinegar
  • Salt to taste (1/2 tsp)

Instructions

  1. Blend all ingredients minus one can drained Rotel and reserved liquid.  Stir in second can of Rotel.  Add reserved liquid if needed.  Adjust salt.
  2. Serve with tortilla chips or your favorite Mexican dish (and margaritas). Lasts about 3-4 days in fridge.

Notes

You can make this in the blender or with an immersion blender.
