My husband and I love to travel and eat.  Chicago is one of our favorite foodie cities.  We arrive on a cold day in November to the sounds of Christmas decorations being hung on Michigan avenue and the smell of caramel corn outside of the legendary Garrett’s popcorn shop.  We walk through millennium park, take in the sites of the ever-evolving architecture of the windy city with a river tour, and peruse the architectural splendor of Frank Lloyd Wright at his former home and studio in Oak Park.  

The food Chicago offers, from a hot dog at Portillo’s to a re-imagined edible abstract painting dessert at Alinea, is magical and provides much needed inspiration for my culinary adventures when I return home.  Sometimes, inspiration strikes when dining in a Restoration Hardware.  This green goddess slaw was inspired by the Gem Lettuce Salad at the Three Arts Club Cafe within the Chicago Restoration Hardware.  Yes, my favorite salad is served inside a furniture retailer.  I beg you to trust me.  This salad features baby gem lettuce, crumbles of feta cheese, thinly sliced radishes, and chunks of avocado all bathed in the herbiest buttermilk dressing. 

Each year when I flock to the Three Arts Club Cafe to devour this salad, the waitress asks the same question. Would you like a protein on your salad?  Salmond, shrimp, steak, chicken?  My reply is always the same.  No thank you.  Just the salad will do.  It needs no assistance from a protein to endure its flavor within my food palate memory.  In fact, I think a protein would just detract from the inherent fresh, bright flavors of the salad.  A glass of Pinot Gris or Sauvignon Blanc is all this salad needs on the side.

Green Goddess Dressing Cabbage Slaw

Description

Sometimes, inspiration strikes when dining in a Restoration Hardware.  This green goddess slaw was inspired by the Gem Lettuce Salad at the Three Arts Club within the Chicago Restoration Hardware.  


Ingredients

Dressing

  • 1 avocado, peeled and deseeded
  • 3/4 cup buttermilk
  • 1/4 cup sour cream
  • 1 Tbs honey mustard
  • 2 Tbs fresh parsley, chopped
  • 2 Tbs fresh dill, chopped
  • 3 Tbs fresh basil, chopped
  • 1/2 cup fresh cilantro, chopped
  • 3 Tbs lime juice
  • 3 cloves roasted garlic (optional)
  • 1 Tbs honey
  • 1/2 cup green onions, chopped
  • Salt and pepper, to taste

Slaw

  • 1 small head purple cabbage, sliced in strips
  • 1 small head cabbage, sliced in strips
  • 1 bunch green onions, chopped
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. First make the dressing: Combine all ingredients in a blender.  Pulse until ingredients are well combined.
  2. Next make the slaw: Combine all ingredients in a large bowl.  Coat with dressing, adding about ½ cup at a time.  Continue adding the dressing until you reach the desired consistency for the slaw.  Season with salt and pepper.

Notes

Yields total of 2.5 cups of dressing.
