There is an art to cooking BBQ that I am yet to master. But, these BBQ chicken nachos can be mastered in under 30 minutes.

About 10 years ago, we stopped in at Central BBQ for lunch and I noticed something curious on the menu…BBQ nachos. I had never seen this on the stereotypical BBQ menu of pulled pork, baked beans, and mac and cheese. My curiosity won and we ordered the BBQ nachos. The thought of drenching tortilla chips in BBQ sauce instead of melted cheese seemed foreign and almost sacrilegious. But after I tasted the first bite of salty, cheesy, smoked goodness, with a hint of sweetness from the BBQ sauce, I reflexively closed my eyes to savor the flavor combination.

Every BBQ restaurant we visit, I order the nachos. I’ve tried several over the past ten years and this is my favorite rendition that are a staple at our house for a quick dinner or appetizer for a party. I like to freeze BBQ chicken or pork in small portions to pull out for these nachos throughout the year. And if you don’t have BBQ readily available, just use a rotisserie chicken and coat it in some extra BBQ sauce.

These BBQ chicken nachos can be mastered in under 30 minutes!








Ingredients
- 1 bag tortilla chips
- 1/2 BBQ chicken or rotisserie chicken, shredded
- 3/4 cup BBQ sauce
- 1 cup salsa
- 1 cup white queso
- 1 cup shredded Mexican cheese mix
- 1/2 cup red onion, finely diced
- 1 cup sour cream or spiced sour cream in a piping bag or Ziploc bag with small hole cut in the corner
- 1/2 cup cilantro, chopped
- 1/2 cup green onions, diced
Instructions
- Preheat oven to 375 degrees F.
- On a sheet pan, spread out the nacho chips.
- Top with shredded chicken.
- Squirt BBQ sauce across the top of the chicken.
- Spoon the salsa on top of the chicken.
- Top with white queso, Mexican cheese, and red onion.
- Cook in the oven for 5-7 minutes, or until cheese is just melted.
- Remove from the oven and top with sour cream, cilantro, and green onions.
Notes
I like to pipe the sour cream or spiced sour cream across the top (feel free to get creative with design).
