If you are collecting quarters to fund your next olive oil splurge, you have found the right recipe for that spendy olive oil.  Never sipped olive oil off the tip of a spoon?  Never noticed a difference between Cosco olive oil and the small dark green bottle at legendary and greatly missed Dean and Deluca?  Sample your olive oil.  Your taste buds will thank you because not all olive oil is created equal.  Using olive oil from Sam’s in your homemade salad dressing is not going to win you hundreds of fans.  But using a delicious, spritely olive oil in your salad dressing will not only impress your guests, but miraculously make you want to eat more salad. 

While on vacation in Sicily, my husband and I went to a local olive orchard, Tenuta Cavasecca, and sampled their olive oils.  Our tasting was followed by a delicious homemade meal of cheeses from Ragusa, local eggplant caponata, almond cake, and a homemade cinnamon liquor.  A few glasses/bottles of local wine later, we were enthralled with this sinfully delicious Sicilian olive oil.  I am convinced that the sun that shines on Sicily has magical powers that make all fruits and vegetables taste more delicious.  Their olive oil is no exception. 

This tangy but sweet salad dressing is the perfect complement to baby gem lettuce, shaved carrot, watermelon radish, and diced chives.  I like to make this dressing in advance and keep in the refrigerator for up to a week.  If you don’t have time to let it come to temperature, then microwaving it for 15-20 seconds is enough to reincorporate the oil with the other ingredients.

Simple Salad Dressing

Description

I am convinced that the sun that shines on Sicily has magical powers that make all fruits and vegetables taste more delicious.  Their olive oil is no exception.


Ingredients

Units Scale
  • 1 Tbs shallots, diced finely
  • 1 Tbs honey mustard
  • 1 Tbs maple syrup
  • 2 Tbs sherry vinegar
  • 1 Tbs lemon juice
  • 1/31/2 cup olive oil
  • 1/4 tsp ground pepper
  • salt, to taste

Instructions

  1. In a large bowl, whisk the shallots, honey mustard, maple syrup, sherry vinegar, and lemon juice.
  2. While constantly whisking, drizzle in the olive oil and whisk until combined.
  3. Add the pepper and salt to taste.
