Shortbread
Shortbread is my favorite “cookie.” Of course, in most of the world it is called a “biscuit,” and everyone knows that I love a biscuit! Shortbread is like the blank canvas of cookies. It’s great by itself or dressed up with lemon curd, praline pecan topping, or dipped in chocolate. This version is light and flakey, not too sweet, and perfect to go with tea or coffee.
Gingerbread Cookies
I have always loved gingerbread cookies and over the past twenty years have tried several different recipes for my Christmas cookie bags. This is a lovingly adapted recipe from the now defunct Gourmet Magazine. It is the best that I have stumbled upon in terms of the balance of the spices and the degree of fluffiness. It is also a very forgiving dough…so you can mess up and re-roll it several times which is great for toddlers.
Meyer Lemon and Mandarin Orange Curd
In my family, we like intense flavors. This curd is bright and sweet, perfect for afternoon tea or after dinner dessert. It is not as tart as lemon or lime curd, but the flavor is still intense. I like it best with shortbread. You can also use it as a tart filling or on vanilla pound cake.
Frozen Cranberry Salad
My paternal grandmother always served a “salad” with any proper meal. That could be a green salad, fruit salad, Jell-O salad, canned pear with cheese, mayo and maraschino cherry on lettuce, or a frozen salad. I always thought the frozen salads should be dessert! Some had sweetened condensed milk and whipped cream…mercy. They were all delicious and still taste like “childhood.”
This frozen cranberry salad is a holiday tradition in our family. I always wondered why we didn’t have it the rest of the year. Maybe my healthier version will be a little more guilt free! Or, a popsicle.
Bon Bons
Bon bons are my favorite Christmas treat! I can remember making these with my mom as a young child. Now, I make them with my kids. They love to dip them in chocolate. Sometimes it is one to dip in chocolate and one to taste.
