- 1 pound scallops
- Juice of one lemon (about 2 Tbs)
- 1 Tbs olive oil
- 1 tsp maple syrup
- 1 small bay leaf
- Salt and pepper to taste
Instructions
- Combine all ingredients, except the scallops, in a bowl and mix to combine.
- Pour the marinade over the scallops.
- Place the scallops in a sous vide bag and vacuum seal.
- Sous vide at 123°F for 30 minutes.
- Remove from the bag and sear over high heat until browned on each side.
