Sous Vide Scallops

Description

These sous vide scallops are buttery, tender, and nearly impossible to overcook. Finished with a quick sear for a golden crust, they’re an easy way to bring restaurant-quality seafood to your dinner table.

Ingredients

Scale
  • 1 pound scallops
  • Juice of one lemon (about 2 Tbs)
  • 1 Tbs olive oil
  • 1 tsp maple syrup
  • 1 small bay leaf
  • Salt and pepper to taste

Instructions

  1. Combine all ingredients, except the scallops, in a bowl and mix to combine.
  2. Pour the marinade over the scallops.
  3. Place the scallops in a sous vide bag and vacuum seal.
  4. Sous vide at 123°F for 30 minutes.
  5. Remove from the bag and sear over high heat until browned on each side.
